Very Berry Sheet Pan Pancakes

Ingredients
  

  • ½ cup Mazola Corn Oil
  • 1 and ½ cup whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 3 tablespoons sugar
  • 2/3 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup blackberries
  • ¼ cup strawberries sliced
  • ¼ cup blueberries

Method
 

  1. Preheat oven to 425 degrees F. Spray a 10 x 15-inch sheet pan with cooking spray or line the baking sheet with parchment paper. In a large bowl combine the whole wheat flour, baking powder, baking soda, cinnamon, salt, sugar, milk, Mazola Corn Oil, eggs, and vanilla extract.
  2. Pour the pancake batter into the prepared sheet pan and even the batter out. Sprinkle the blackberries, strawberries, and blueberries on top of the batter and bake for about 10-12 minutes, or until slightly risen and cooked through.
  3. Cut into squares, and serve warm with maple syrup or fresh fruit.
