Hawaiian Grilled Chicken & Pineapple Kabobs

Servings: 8

Ingredients
  

  • 2 lbs skinless boneless chicken breasts cut into cubes
  • 1 red bell pepper cut into cubes
  • 1 yellow bell pepper cut into cubes
  • 1 green bell pepper cut into cubes
  • 1 orange bell pepper cut into cubes
  • 2 cups fresh pineapple cut into cubes
  • ½ cup soy sauce
  • ¼ cup pineapple juice
  • ½ teaspoon ground ginger
  • Salt/pepper to taste
  • Skewers

Method
 

  1. Preheat grill to medium heat.
  2. In a small bowl, whisk together the soy sauce, pineapple juice, and ground ginger. Set aside.
  3. Thread the chicken, pineapples, and peppers onto the skewers and baste them with sauce. Sprinkle with salt and pepper and place them on the grill. Cook for about 10-12 minutes, making sure to baste kabobs halfway through, or until the meat is cooked through.
  4. Remove from the grill and garnish with fresh herbs, if desired.
  5. Enjoy!
