These Spooky Halloween Jack-O-Lantern Bell Peppers are the perfect, nutritious treat for a night of fun! It’s a great way to encourage your kids to eat more veggies!
Can you believe that Halloween is in a couple of days?! Halloween is one of my kid’s favorite holidays! They love to dress up, and of course eat tons of candy.
To prevent my kids from going overboard with the sugar, I decided to make these fun, healthy jack-o-lantern bell peppers! They were super easy to make and such a fun activity!
How to Make Jack-O-Lantern Bell Peppers
All you need are just a few things to make these fun bell peppers come to life. Start by gathering a variety of bell peppers and a sharp paring knife. I chose to use a variety of colors to make the presentation more appealing!
Next, decide on the spooky faces that you want your bell peppers to have. My kids wanted one of the bell peppers to have a spooky face and the others to have a funny face, so I tried my best to make this happen lol! If your knife skills are on point, you can certainly free hand these deigns, but if you need a little help like I did, try using an edible marker to design the faces and then use the knife to carve out the designs.
Once you have the designs carved out, start filling the bell pepper bowls with veggies. I used carrots, broccoli, and cauliflower, but you can use any combination of veggies that you want. Since we had an extra bell pepper left, I carved out a little bowl to hold the ranch dressing, which came in handy for dipping.

Spooky Halloween Jack-O-Lantern Bell Peppers
Ingredients
- 2 large green bell peppers
- 1 large yellow bell pepper
- 2 large red bell pepper
- Baby carrots
- Cauliflower
- Broccoli florets
- Ranch dressing your favorite brand
Instructions
- Cut off the top of each pepper. Remove and discard the cores and seeds. Set aside one of the green peppers.
- Using a sharp paring knife, carve a Jack-O-Lantern face into each pepper and fill each one with vegetables.
- For the remaining green bell pepper, carve out a zig-zag design ‘bowl’ and fill it with ranch dressing.
- Serve on a large platter and Enjoy!
