As moms, we try to have it all figured out. Let’s face it, we’re not perfect. But dinner CAN be!! Don’t sweat it. On busy nights like these, I like to whip up my Simple Vegetarian Taco Soup. It’s the perfect go-to weeknight meal!
This recipe will never get boring because of all the different toppings that you can add to jazz it up. Everyone can pick and choose what they like to create their favorite bowl of vegetarian taco soup.

We usually keep it simple with a dollop of sour cream, shredded cheese, and green onions. Yum! Did I mention there’s no meat in this recipe? If you’re like me, you grew up eating meat in every meal. I wanted my kids to have a more balanced diet to ensure they get enough fiber, and essential vitamins and minerals.

Simple Vegetarian Taco Soup
Ingredients
- 1 Tbsp vegetable oil
- 1/2 large yellow onion peeled & diced
- 1 garlic clove minced
- 1/2 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp paprika
- 2 14.5-oz cans stewed tomatoes
- 1 15-oz can of red beans
- 1 15-oz can of corn
- 1 15-oz cans black beans rinsed and drained
- 1 10-oz can diced tomatoes & green chilies
- 2 and 1/2 cups water
- 1 packet ranch seasoning mix
- Salt/pepper to taste
FOR THE GARNISH:
- Green Onions
- Chopped cilantro
- Sour cream
- Shredded cheddar cheese
Instructions
- Heat oil in a large saucepan over medium heat. Add onion and sauté until softened, stirring frequently for 3-4 minutes. Add garlic and stir frequently until fragrant, about 30-60 seconds. Do not let the garlic burn.
- Stir in cumin, chili powder, paprika, stewed tomatoes, beans, diced tomatoes & chiles, corn, ranch packet and water until combined.
- Bring to a boil over medium-high heat, then reduce heat to low. Continue to simmer for about 15 minutes, until liquid is reduced by a quarter. Remove from heat and season with salt and pepper to taste.
- Serve with your favorite toppings and Enjoy!
