There’s nothing like a crunchy, cheesy taco! Wouldn’t you agree? Tacos are a staple in our home. My boys request them on a weekly basis lol. And with school back in session, I’m always looking for quick and easy dinner ideas that my whole family will enjoy. I think I found a winner with these super yummy Easy Cheesy Taco Cups!
This recipe combines the traditional taco ground beef and cheese, but with added nutritional value from the zucchini! That’s right, zucchini!!
Zucchini is an excellent choice to incorporate into your kids’ diet. Did you know that zucchini can help boost your child’s immunity? Which is a great benefit, especially during these times. They’re also rich in vitamins and minerals – and can help naturally fight asthma.
These Easy Cheesy Taco Cups are super easy to prepare and put together. Start by cooking your ground beef and chopped zucchini in a large skillet. Next add in your taco seasoning. Cook for about 5-6 minutes or until it’s cooked through. Remove from heat and set aside.
Coat a 12-cup muffin tin with cooking spray. Place one wonton wrapper into the bottom of each muffin cup. Spoon approximately 1 tablespoon of the meat mixture into each cup and top with about 2 teaspoons of cheese. Place a second wonton layer on top of the cheese, then add the remaining meat and cheese across all the muffin cups. Bake at 400 degrees F for about 10-12 minutes or until edges are browned and cheese is melted.
Top with sour cream and serve! The kids will surely ask for these again and again. Enjoy!
Easy Cheesy Taco Cups
Ingredients
- 1 pound ground beef
- 1 zucchini chopped
- 2 tablespoons taco seasoning
- Salt & pepper to taste
- 24 wonton wrappers
- 1 & ½ cups shredded cheddar cheese
- Optional: sour cream
Instructions
- Preheat the oven to 400 degrees. Heat a large pan over medium high heat. Add the beef and zucchini to the pan. Use a spatula to break up the meat, stirring constantly. Add the taco seasoning and salt/pepper to taste. Cook the meat for about 5-6 minutes or until cooked through. Remove from heat.
- Coat a 12-cup muffin tin with cooking spray. Place one wonton wrapper into the bottom of each muffin cup. Spoon approximately 1 tablespoon of the meat mixture into each cup and top with about 2 teaspoons of cheese.
