I’m not a huge fan of hiding veggies in food because I want my kids to know exactly what they’re eating, but I am a big fan of adding veggies to a few of their favorite foods such as pizza and tacos! I’ve even served them zucchini noodles, or zoodles, by topping them with a serving of cheesy marinara sauce. It was a big hit!
Since my kids are fans of zoodles, I decided to make this Creamy Lemony Chicken & Zoodles dish! First, let’s talk about actually making the zoodles.
HOW TO MAKE ZUCCHINI NOODLES
You can use a spiralizer, such as THIS ONE. Simply place your zucchini on the base of the spiralizer and twist the knob. On the other side, you’ll end up with perfect zoodles! I love just love this Ultimate Veggie Spiralizer because it works great and it’s inexpensive!
We’ve been eating zucchini noodles for a while. They are so versatile and can be enjoyed cooked or raw…it’s totally your preference. It’s such a great way to add in a few extra veggies and a few health benefits too!

Creamy Lemony Chicken & Zoodles
Ingredients
- 5 cups zucchini noodles
- 12 oz pre-cooked grilled chicken strips
- 1/3 cup heavy cream
- ½ cup low sodium chicken broth
- ½ cup shredded mozzarella cheese
- 3 tbsp margarine
- 2 tbsp lemon juice
- 2 tsp garlic powder
- Salt/pepper to taste
Instructions
- On low-medium heat, melt margarine in a large skillet. Add heavy cream, chicken broth, mozzarella cheese, lemon juice, and garlic powder to skillet and stir frequently until smooth.
- Add chicken strips and zucchini noodles to the skillet and toss until all ingredients are coated with sauce.
- Serve warm and enjoy!
