How many of you are fans of chicken pot pie?? When I was younger, I didn’t care for this meal…at all!! I think it was because my mom purchased those frozen pot pies which always tasted like cardboard! Yuck!

Luckily, I decided to give chicken pot pie another try and fell in love with it! I made it from scratch, which made a huge difference compared to those “cardboard-tasting” pot pies from my childhood! Lol!

Even though my homemade chicken pot pie was delicious, my kids were hesitant to try it. To make this dish appeal to my little ones, I decided to give my traditional recipe a kid-friendly makeover!
I added more veggies and I also added in some ranch seasoning! I used store bought croissant dough to make mini pastry cups and filled each cup with chicken pot pie filling. After 15 minutes in the oven, my 5-Ingredient Mini Chicken & Ranch Pot Pies were done and ready to serve!

5-Ingredient Mini Chicken & Ranch Pot Pies
Ingredients
- 2 cans (8 count, 8oz) refrigerated crescent dough store bought
- 1 and ½ cup cooked chicken chopped
- 1 can (10.5 oz) cream of chicken reduced fat
- 1 and ½ cup thawed mixed vegetables
- 1 packet ranch seasoning
- Optional: salt and pepper to taste
Instructions
- Preheat oven to 375 degrees F.
- In a bowl, mix together chicken, cream of chicken, and mixed vegetables. Season with salt/pepper to taste, if desired. Set aside
- On a flat surface, roll out crescent dough and carve out 12 squares.
- Grease a muffin tin with cooking spray and carefully place 1 square of dough into each tin. Press dough to seam together any holes or gaps.
- Add chicken mixture into each tin and bake for about 13-15 minutes, or until desired browness is achieved.
- Enjoy!
