Sloppy Joe Sliders with Sweet Potatoes

Ingredients
  

  • 2 lbs ground beef
  • 1 sweet potato peeled & shredded
  • 1 onion diced
  • 1 clove garlic minced
  • 8 slices swiss cheese
  • 15 Hawaiian Rolls
  • ¼ cup melted butter
  • 1 tablespoon dried minced onion
  • Salt/pepper to taste

For the Sloppy Joe Sauce:

  • 2 cups ketchup
  • 2 tablespoons mustard
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar

Instructions
 

  • Preheat oven to 350°F.
  • In a large skillet over medium heat, add the ground beef and the shredded sweet potato. Using a spoon, break up the meat and stir until browned.
  • Add the onion and garlic and continue to cook until the onions are translucent.
  • In a medium bowl, whisk together the ketchup, mustard, Worcestershire sauce, and brown sugar. Add to the meat mixture and stir until the meat is fully cooked and sauce is evenly combined. Season with salt/pepper to taste. Let simmer for 5 minutes and set aside.
  • Cut the dinner rolls in half and place the bottom half in a baking dish. Add Swiss cheese and top with meat. Place the top of the rolls back on top and brush the rolls with melted butter, and sprinkle with minced onion.
  • Bake for 10-15 minutes, or until rolls are toasted and cheese is melted.
  • Slice into individual sliders and garnish with parsley, if desired.
