Very Berry Sheet Pan Pancakes

  • ½ cup Mazola Corn Oil
  • 1 and ½ cup whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 3 tablespoons sugar
  • 2/3 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup blackberries
  • ¼ cup strawberries sliced
  • ¼ cup blueberries


  • Preheat oven to 425 degrees F. Spray a 10 x 15-inch sheet pan with cooking spray or line the baking sheet with parchment paper. In a large bowl combine the whole wheat flour, baking powder, baking soda, cinnamon, salt, sugar, milk, Mazola Corn Oil, eggs, and vanilla extract.
  • Pour the pancake batter into the prepared sheet pan and even the batter out. Sprinkle the blackberries, strawberries, and blueberries on top of the batter and bake for about 10-12 minutes, or until slightly risen and cooked through.
  • Cut into squares, and serve warm with maple syrup or fresh fruit.
