Fluffy Banana Cinnamon Pancakes

Ingredients
  

  • 2 bananas mashed
  • 1 & ½ cups all-purpose flour
  • 2 tsp ground cinnamon
  • 3 tbsp sugar
  • 2 tbsp baking powder
  • ¼ tsp salt
  • 1 cup milk
  • 1 egg
  • 2 tbsp oil
  • 1 tsp vanilla extract

Optional:

  • Banana slices whipped cream, and cinnamon for topping

Instructions
 

  • In a large bowl, combine the bananas, flour, cinnamon, sugar, baking powder, salt, milk, egg, oil and vanilla extract. Set aside.
  • Heat 1 tablespoon of oil or butter in a skillet over medium heat.
  • Add about ½ cup of pancake batter per pancake to the skillet.
  • Cook until bubbles form on top, then flip. Cook for another minute or two, until golden brown.
  • To serve, top with bananas, whipped cream, and cinnamon. Enjoy!
