Easy Cheesy One Pot Pepperoni Pizza Pasta

Ingredients
  

  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 cup pepperoni plus a few more pieces for topping
  • 1 (24 oz) jar marinara sauce
  • 3 cups water
  • 1- pound dry, uncooked penne pasta
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup fat-free mozzarella cheese shredded
  • 1 teaspoon garlic powder
  • 1/4 cup fresh basil chopped
  • Salt & pepper to taste

Instructions
 

  • In a large pot or Dutch oven, on med-high heat, add oil and sauté garlic for about 1 minute. Add in the marinara sauce and water and bring to a boil. Add in pepperoni, basil, tomatoes, and pasta, and cook for about 15 minutes or until most of the water is absorbed and the pasta is tender. Be sure to stir frequently to prevent pasta from sticking to the bottom.
  • Stir in half of the mozzarella cheese and season with garlic powder, and salt & pepper to taste. Top pasta with the remaining mozzarella cheese and few more pepperoni slices, and place in the oven and broil for about 6-8 minutes or until the cheese begins to brown.
  • Garnish with basil, Serve & Enjoy!
